aatukaal paaya

v AATTUKKAAL 3 to 4 legs, cut into 2 to 3 inch pieces
v Ginger, garlic paste 1 tablespoon
v Whole garam masala (cinnamon, cloves, cardamom, bay leaf, star anise, saunf little bit)
v Large onions 2 chopped
v Turmeric powder
v Green chillies 4 to 5
v chilli powder 1 teaspoon
v coriander powder 3 teaspoons
v ground coconut 2 tablespoons
v chopped coriander leaves and curry leaves
v salt and oil as needed

METHOD:
v In a pressure cooker, add oil and heat it. Add whole garam masala and sauté it. Add curry leaves.
v Add ginger garlic paste, turmeric powder, slit green chillies, and chopped onions and fry little.
v Add AATTUKKAAL and stir well.
v Add 8 to 10 cups of water and add salt and pressure cook for 8 to 10 whistles.
v Remove the lid and see if the meat from the bone is soft and going t be separated. If not, again cook for 3 more whistles.
v Add coriander powder, chili powder, and let it boil for 5 min so that the raw smell goes off.
v Add coconut grounded paste to it and let it cook for 2 more minutes.
v Add coriander leaves and serve hot with paratha, poori, or chapati
