Amalfi Lobster Salad Recipe

A great salad for warm weather dining.
Amalfi Lobster Salad
Recipe Ingredients

  • 4 Lobster Tails, Cooked (See Note Above)
  • 4 Large Ripe Tomatoes (Beefsteak)
  • 1 Medium Red Onion, Peeled And Finely Sliced
  • 1/3 Cup Fresh Chopped Parsley
  • Juice From 1 Lemon
  • 1/3 Cup Olive Oil
  • Sea Salt & Cracked Black Pepper
  • To Serve:
  • Additional Lemon Wedges
Recipe Method

  1. Remove the lobster meat from the shells and chop into 1 1/2 inch pieces, then place in a bowl.
  2. Core the tomatoes and cut into wedges and then slice the wedges in half, and add to the bowl.
  3. Add the onion slices, parsley, lemon juice, and olive oil and toss well to combine.
  4. Season with salt and pepper.
  5. Serve on individual plates with additional lemon wedges.
