APPLE SNACK CAKE

INGREDIENTS

  • 4 tablespoons unsalted butter, melted, plus more for pan
  • 1 cup whole-wheat pastry flour
  • 3/4 cup granulated sugar
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 cup applesauce
  • 1/2 cup buttermilk
  • 1 large large egg
  • confectioners’ sugar, for dusting

COOKING DIRECTIONS

Heat oven to 350° F. Butter an 8-inch baking dish.

Whisk together the flour, sugar, baking powder, baking soda, and cinnamon in a medium bowl; set aside.

Add the applesauce, buttermilk, butter, and egg and mix to combine.

Transfer to the prepared pan and bake until a toothpick inserted in the center comes clean, 20 to 30 minutes.

Cool in the pan for 5 minutes, then turn out to cool completely.

Dust with the confectioners’ sugar.
