Basbousa is a spongy semolina cake poured with rose-water, lemon and sugar syrup – a pure bliss!
Recipe Ingredients

  • 1/2 cup butter (ghee)
  • 1/2 cup sugar
  • 5/8 cup buttermilk
  • 1 cup semolina
  • 3/4 teaspoon vanilla
  • 1/2 tablespoon baking powder
  • 3/4 teaspoon baking soda
  • For sugar syrup
  • 1\2 cup sugar
  • 1\2 cup watermelon juice and rose water to taste
Recipe Method

  1. Preheat oven to 170C/350F degrees.
  2. Melt butter, allow to cool to room temperature.
  3. Combine sugar and buttermilk in a large bowl.
  4. Combine the semolina, vanilla, baking powder and baking soda in a separate bowl.
  5. Add semolina mixture to buttermilk mixture, mix well, then add melted butter, and mix well.
  6. Coat a square pan with a tahini paste (or you may use ghee, instead).
  7. Bake for 30 minutes.

For Sugar Syrup

  1. Combine sugar, water and lemon juice in a saucepan.
  2. Bring to a boil, reduce heat and allow to simmer for 20-25 minutes, mixture should somehow thicken when it cools. Add some rose water, say 1-2 tbsp.
  3. Pour a generous amount of sugar syrup over the cake and set aside for a while for the cake to get soaked with the syrup.
  4. Then, cut into squares, garnish with pistachios and enjoy with tea or coffee!
