Blue Corn and Pepper Bread


3 tb Oil
3 tb Unsalted butter
1 Red bell pepper Cored seeded and diced
1 Jalapeno chili Cored seeded and minced
2 Garlic cloves; minced
3/4 c All-purpose flour
1 c Blue cornmeal
4 ts Sugar
2 ts Baking powder
1/4 ts Baking soda
1/2 ts Salt
2 Eggs
3/4 c Buttermilk


Preheat oven to 375. Lightly grease an 8″ square baking pan. In a small skillet over medium heat, heat the oil and butter; when the butt somewhat; cut into squares and serve. Makes 8 to 10 servings
