Caribbean Chicken Rice

 

Recipe Ingredients

Chicken breast                          2

Onion chopped                         1

Tomatoes chopped                  2

Green chilies                              3

Rice                                              300 gm

Crushed black pepper             1 tsp

Lemon juice                               1 tbsp

Butter                                          2 tbsp

Peanut butter                            3 tbsp

Chicken stock                            1 ½ glass

Salt                                               to taste

Ingredients for Marination

Garlic chopped                         2 cloves

Thyme                                         1 tsp

Lemon juice                               1 tbsp

Oil                                                 1 tbsp

Chili powder                              ½ tsp

Turmeric                                     ¼ tsp

 

Recipe Method

Cut 2 chicken breast into strips, marinate with 2 tbsp oil, 2 cloves of garlic, 1 tsp thyme, ½ tsp chili powder, ¼ tsp turmeric and 1 tbsp lemon juice.

Bake in a preheated oven on 200 degrees for 3 – 4 minutes.

Now remove from oven and keep aside.

Heat 1 tbsp oil and 2 tbsp butter in a pan, add 1 chopped onion and fry till onion is tender.

Now add 2 chopped tomatoes, 3 chopped green chilies, salt to taste and 1 tsp black pepper. Mix well.

Now add 3 tbsp peanut butter and 1 ½ glass of chicken stock. Cook till it comes to a boil.

Add in 300 gm rice, cook till extra water dries, now add roasted chicken.

Cover and simmer on low flame for 8 – 10 minutes.

Dish it out and serve hot.
