Chicken Corn Rice Ring Recipe

Impressing guests with a new dish which taste as good as it looks is a difficult task, but Shireen Anwar uses her talent to tell you how to cook up this great creamy & delightful dish in a presentable manner.
Recipe Ingredients

  • Oil 4tbsp
  • Butter 1tbsp
  • Boiled rice 1/2 kg (4cups)
  • Sweet corn 1cup
  • Capsicum 2-3 tbsp (1small)
  • Coriander leaves 1-2 tbsp
  • Spring onion leaves 2-3 tbsp
  • Salt 1tsp
  • Black pepper powder 1/2 tsp
  • Green chilies 2-3

For filling:

  • Boneless chicken 1/2 kg
  • Oil 2-3tbsp
  • Butter 1tbsp
  • Garlic paste 1-1/2 tsp
  • Salt 1/2 tsp
  • Black pepper 1/2 tsp
  • Onion 2 tbsp
  • Flour 2 tbsp
  • Water 1 cup
  • Mushrooms 4 tbsp
  • Cream 1/2 cup
  • Coriander leaves 1 tbsp
  • Spring onion leaves 1-2 tbsp
  • Green chillies 2 (cut)
Recipe Method

  1. Heat up oil in a pan and add butter for flavor.
  2. When butter melts, add boiled rice in it.
  3. Now add sweet corn, capsicum, coriander leaves, spring onion leaves, salt and black pepper powder and green chillies in it.
  4. Mix them all very well.
  5. Take a ring mold and fill up with the rice mixture.
  6. Cover this mold with foil paper and bake it for 10-15 minutes in a preheated oven.

For Filling:

  1. heat up oil in a pan and add butter. Add garlic paste and fry for 1-2 minutes.
  2. Now add chicken and fry for 4-5 minutes.
  3. Now add salt, black pepper, onion and flour in it.
  4. Fry for 2 minutes and take off the pan from flame and than add water in it.
  5. Place back the pan on heat and add mushrooms, cream, coriander leaves, green onion leaves and green chillies in it.
  6. Cook for 2-3 minutes.
  7. Assembling: Remove the foil from the rice mold, Place a plate on top of the rice mold and flip over.
  8. Remove mold and rice should be arranged in a ring shape.
  9. Take a few tablespoons of rice and place it in the center of the ring and fill the rest up with chicken.
  10. Garnish with fresh coriander and salad.
