Chicken MOrnay

This flavorful chicken recipe combines chicken in a rich white sauce loaded with cream and cheese.

Chicken Mornay at


1 Whole Chicken 
Salt & Pepper to taste 
4 oz or 1cup Butter or Margarine 
1 oz or 1/4 cup of Flour 
1/2 pint or 1 & 1/4 cup Milk 
2 oz or 1/2 cup Cheese grated 
1 tsp French mustard 
1 tbsp Crushed Corn flakes


Cut the chicken from joints. 
Dot with butter and bake for 20 minutes in oven. 
Make the white sauce. Melt 1oz butter, add flour and mix well and cook for 2 to 3 minutes. 
Remove from heat and add milk, 1 oz cheese and mix well and cook for 3 minutes add remaining butter little time to time and cook again for 5 minutes. 
Pour the excess liquid from chicken, cover with sauce and sprinkle with cornflakes and remaining cheese. 
Grill for 5 to 10 minutes or until bubbling.(oven setting:400F or gas mark 6) 
Serve very hot.
