Cholesterol Free Cookies

1/2 c. granulated sugar
3/4 c. salt free corn oil
1/4 c. egg beaters
1 tsp. grated orange rind
1/4 tsp. orange juice
1 tbsp. low sodium baking powder
3 1/2 c. flour, all purpose

 

Cream sugar and butter together until smooth. Add egg beaters, orange rind, orange juice, and mix well. Mix together low sodium baking powder and flour. Add to creamed mixture and mix well. Roll dough into 1 inch balls and place on ungreased cookie sheet. Rub small amount of salt free butter on bottom of glass. Dip glass in granulated sugar. Flatten cookie dough ball slightly using flat end of glass. Bake at 300 degrees for 10-12 minutes. Yields 2 1/2 to 3 dozen.
