Crunchy Salad
Recipe Ingredients

  • 1/2 tbsp Curry powder
  • 3 tbsps Mango chutney
  • 2.5 Chicken breasts
  • 1 Cucumber , sliced
  • 4 tbsps Olive oil
  • 4 tbsps Almonds (grated)
  • to taste Lemon
  • 2 pounds Watercress
Recipe Method

  1. In a bowl marinate chicken with curry powder and a tbsp of oil.
  2. In a pan cook chicken until golden
  3. Cut into strips.
  4. Whisk remaining oil and mango chutney with lemon juice.
  5. In a bowl mix cucumber, watercress, chicken and almonds.
  6. Serve
