Fattoush

Makes 1 large salad, enough for 2-4 people (depending on how greedy you are!) For the salad

1 small head Romaine lettuce, chopped into I cm-thick strips

1 small bunch pursiane, leaves picked

12-16 small mint leaves (pick the tiny ones!)

350 g cherry tomatoes, sliced in half

2 spring onions, finely sliced (white part only)

2 green peppers, chopped into 2 cm cubes

3 Lebanese cucumbers (the small variety), sliced in half lengthways, then into 1 cm- thick half-rounds

4 radishes, finely sliced with a mandolin

1 large Arabic bread (pita bread), split in half (so you have 2 thin parts instead of 1 thick part) and sliced into 2 cm squares.

 

For the dressing

1/2 clove of garlic, finely grated

Juice of 1 lemon

rind of ‘/2 a lemon, finely chopped

1 ½ tsp sumac

1 tbs pomegranate molasses

3 tbs extra virgin olive oil

Salt and pepper to taste

 

Place the bread on a large, oiled baking sheet and season with salt Toast the bread in a preheated oven at 200°C until lightly golden. Note: watch the bread closely, it crisps up very quickly and can go from golden to burn in a matter of seconds! (Very frustrating)

While the bread is in the oven, place all of the other salad ingredients in a large bowl. Whisk all of the dressing ingredients together in a smaller bowl, then pour over the salad and mix gently Place in a large, shallow serving bowl

When the bread is crisp and golden in color, remove from the oven and allow it to cool. Once the bread is cool, place handfuls of it over the salad

Dig in and enjoy!
