Fish Fried Rice


Ingredients
Fish 500 gm
Boiled rice 3 cup
Onion 1
Spring onion few
Capsicum 1
Soya sauce 2 tsp
Fish sauce few drops
Chili sauce 1 tsp
Oyster sauce ½ tsp
Carrot 1
Ginger 1 piece
Garlic 3 – 4 cloves
Black pepper ½ tsp
Corn starch 1 tsp
Oil as required

Method
• Cut 500 gm fish into cubes, marinate with 2 tsp soya sauce and ½ tsp black pepper for 10 minutes.
• Add in 1 tsp corn starch and mix well. Now fry well with oil as required immediately. Remove from oil when golden brown and crisp.
• In the remaining oil add 1 inch piece of chopped ginger and 3 – 4 cloves of chopped garlic. Fry for 1 minute.
• Now add 1 chopped onion and stir fry, also add few leaves of spring onion, 1 chopped capsicum and 1 chopped carrot. Fry well till all the vegetables are tender.
• Add few drops of fish sauce, 1 tsp chili sauce and ½ tsp oyster sauce.
• Then add in fried fish and mix a little.
• Lastly add 3 cup boiled rice and toss well. Dish it out and serve.
