• 1 kg mutton kheema (minced mutton)
  • 100 gms raw papaya
  • Salt according to your taste
  • Spices 1:
  • 5 yellow capsicum
  • 5 gms white pepper
  • 2 cloves
  • pinch of nutmeg powder
  • 4 big cardamom
  • 10 gms whole coriander crushed
  • Spices 2:
  • 5 gms royal cumin seeds
  • 200 gms roasted and grinded onion paste
  • 10 gms ginger paste
  • 20 gms garlic paste
  • 200 gms roasted gram powder
  • 100 gms pure ghee


Add papaya paste and salt with kheema. Now mix spices 1 in it.

Pour ingredients in deep base pan and put burning charcoal in between for that smoky flavor. Open the lid after half an hour.

Keep out charcoal from it. Now add spices 2 with kheema and keep it in the refrigerator for 1 hour.

Now take out the kheema preparation in the refrigerator and spread it on the skewer.

Now press it with your hands. Roast it in the grill till it gets golden brown.

Now take it out from the skewer and serve it with onion rings and green chutney.
