KASHMIRI METHA PULAO

Ingredients

  • Sela rice ½ kg soaked for 1 hour
  • Ghee ½ cup
  • Green cardamom crushed 4
  • Cloves 4
  • Yellow color few drops
  • Almonds and pistachio sliced 2 tbsp each
  • Coconut slices 2 tbsp
  • Red and green asharfi chopped 2 tbsp each
  • Sugar ½ kg
  • Water ½ cup

COOKING DIRECTIONS

Heat ghee in a pan add cloves and green cardamom fry for 2 minutes add ½ kg sugar with ½ cup water cook stirring until sugar dissolves completely add fully boiled rice cook on high flame till water dries add 1 tbsp Kewra water,

sprinkle yellow color just a dash on 2 places add your nuts, leave it on dum for 15 to 20 minutes, remove, serve garnish with red and green asharfi.
