Moong Daal Koshimbir

A nutritious salad of soaked moong dal, cucumbers, coconut and coriander leaves.

Moong Daal Koshimbir

Ingredients

Split green gram skinless (dhuli moong dal),soaked3/4 cup

•Cucumbers2 medium

•Green chillies,finely chopped1 teaspoon

•Scraped coconut3 tablespoons

•Saltto taste

•Lemon juice1/2 tablespoon

•Ghee1 1/2 tablespoons

Cumin seeds1/2 teaspoon

•Asafoetida1/4 teaspoon

•Fresh coriander leaves,chopped1 tablespoon

Method
Peel and grate the cucumbers and put in a bowl. Drain and add moong dal along with green chillies, coconut, salt and lemon juice and mix.

Heat ghee in a small non-stick pan, add cumin seeds and asafoetida. Add the tempering to the cucumber mixture and mix well. Serve garnished with coriander leaves.
