Paneer Butter Masala………..without onion or garlic



½ pound paneer
Pinch of asafoetida
Little bit turmeric
1 tsp cumin seeds
3 tomatoes
2 green chillies
A small piece of ginger
1 tbsp of coriander powder
2 bay leaves
½ cup of yogurt
½ tsp of red pepper (or more if needed)
1 tbsp of corn flour or rice flour – optional.
½ cup peas (or more): cooked if not cooked.
1 tsp garam masala
Salt to taste
Chopped cilantro

1) Cube the paneer into long thin slices
2) Fry the paneer in 2 to 3 spoons of oil, until slightly golden brown
3) Grind tomatoes, green chillies, and ginger, into a paste
4) In the same oil used for frying paneer, add asafoetida, turmeric, and cumin seeds
5) When cumin seeds start to split in oil, add the tomato paste, grinded in step 3
6) Stir fry for 3 to 4 minutes
7) Add coriander powder, chilli powder, bay leaves, and salt
8) Stir fry for 1 minute
9) Mix yogurt with a few spoons of water, and make into a fine smooth paste, without any solids. Add this to the gravy.
10) Keep stir frying for 2 minutes, making sure there are no yogurt solids.
11) Add peas, and cook for a minute
12) Add garam masala
13) Add the fried paneer
14) Add water if needed.
15) If there is too much water, and want to thicken the gravy, mix corn flour with a few spoons of water, and make it into a fine paste with no solids and add this to the gravy.
16) Cover and cook for 3 to 4 minutes.
17) Turn off the stove
18) Garnish with chopped cilantro. Paneer Butter Masala is ready!
