Peach melbas

  • Ingredients
  • 200g raspberries, plus extra to serve
  • 1 tbs caster sugar
  • 2 tbs orange juice
  • 4 whole peaches in syrup (or use 8 canned peach halves in natural juice)
  • Vanilla ice cream, to serve
  • Method
  • Notes
  1. Step 1Place raspberries in a bowl with sugar and crush with a fork. Stir in the orange juice, then pass through a fine sieve into a bowl, pushing down on the solids. Cover and refrigerate until chilled.
  2. Step 2Drain peaches on paper towel. Place in a bowl with ice cream, drizzle with sauce, then scatter with extra raspberries.
