Recipe Ingredients

  • Potatoes (Cubes) 2
  • Carrot chopped 1
  • Green gourd 3
  • Cauliflower 250 gm
  • Capsicum 1
  • Onion 2
  • Peas ½ cup
  • Coriander leaves ¼ bunch
  • Ginger 1 piece
  • Curry leaves few
  • Dry red chilies 5 – 6
  • Yogurt 250 gm
  • Ginger garlic paste 1 tbsp
  • Chili powder 1 tsp
  • Crushed red pepper 1 tsp
  • Turmeric 1 tsp
  • Coriander powder 1 tbsp
  • Cumin powder 1 tbsp
  • Salt to taste
  • Water 1 cup
  • Oil ¼ cup
  • Oil 3 tbsp
Recipe Method

  1. Heat 2 – 3 tbsp oil in a wok, add ginger garlic paste and fry a little. Now add 2 chopped onion and fry till soft.
  2. Add 2 chopped potatoes, 1 chopped carrot, 3 chopped green gourd, 250 gm chopped cauliflower, 1 chopped capsicum and ½ cup peas.
  3. Cook for 1 – 2 minutes.
  4. Then add 1 tbsp coriander powder, 1 tbsp cumin powder, 1 tsp chili powder, 1 tsp crushed red pepper, 1 tsp turmeric and salt to taste. Cook for another 1 – 2 minutes.
  5. Now add 250 gm yogurt and 1 cup water, cover and cook on low flame till all the vegetables are tender.
  6. Remove lid, fry well till water dries. Turn the flame off and remove pan.
  7. In another pan heat ¼ cup oil, add 1 piece of chopped ginger, 5 – 6 dry red chilies and a few curry leaves. Fry well till its fragrance comes out.
  8. Pour on top of vegetable mixture and serve hot.
