RASPBERRY BLONDIES

Ingredients

  • 1 cup white whole wheat flour
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 1/3 cup melted coconut oil
  • ½ cup maple syrup
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 cup raspberries

COOKING DIRECTIONS

Preheat the oven to 350 degrees and grease an 8×8 inch baking dish. Combine the first three ingredients in a medium bowl.

Combine the remaining ingredients, except the raspberries, in a large bowl.

Add the dry ingredients and stir to combine. Fold in the raspberries.

Pour the batter into the prepared pan and bake for 30-35 minutes, until a toothpick inserted in the center comes out clean. Cool completely on a wire rack and then cut into 9 squares.
