Restaurant style gravy



Hello Members,

i want to know how to make gravy as in matar paneer etc the way we get in restaurant. i try to cook at home but feel the taste & appearance is not the same.i like to cook in less oil and don’t put any food color.
the method i follow is:

grate the onions,ginger and garlic in a mixie.
heat oil and fry the above mix till its browned
add dry masalas coriander,turmeric,chilli,garam masala
make a paste of tomatoes& green chill
add this to onion mix, cook till oil separates.
finally add water,salt and bring to boil

i follow the above even for egg curry, sometimes i do add whole garam masalas also.

pls tell me if i am going wrong somewhere.

also i want to know that does it taste better if we make paste of onion or grate it manually or chop it.
