Sindhi Potato Curry Recipe

Vegetables are most necessary food for healthy menu. Whether your all family members like it or n’t but you must keep include different veggies in your menu. More important is that if you will prepare vegetables with delicious recipe then one who dosen’t like them he will also start eating vegetables.
 Sindhi Potato Curry
Recipe Ingredients

  • Potatoes ½ kg
  • Carrot 1
  • Egg plants 2
  • Green chilies 4-5
  • Bay leaves 8-10
  • Tamarind paste ½ cup
  • Mint leaves ½ bunch
  • Coriander ½ bunch
  • Oil ½ cup
  • Fenugreek 1 tsp
  • Cumin 1 tsp
  • Turmeric powder 1 tsp
  • Sugar 1 tsp
  • Ginger garlic paste 1 tbsp
  • Gram flour as required
  • Salt to taste
Recipe Method

  1. Chop all vegetables and keep aside.
  2. Heat the oil in a pan and add fenugreek, cumin and bay leaves and fry till they begin to sizzle.
  3. Then add ginger garlic paste and green chilies, mix well.
  4. Now put red chili powder, turmeric powder and water as required in a same pan and fry.
  5. Then add potatoes and fry again for few minutes.
  6. Add carrot, egg plants, sugar and tamarind, mix well and fry until the vegetables are tender.
  7. Stir in the gram flour and cook until the gravy thickens.
  8. Dish out and garnish with chopped coriander and mint leaves.
