Summer Fish

 

Recipe Ingredients

  • Fish fillet                     300 gm
  • Boiled green beans  125 gm
  • Cucumber sliced      1
  • Boiled eggs                2
  • Baby tomatoes         2 – 3
  • Radish                         3 – 4
  • Olive                            5 – 6
  • Lettuce                        1 bunch
  • Iceberg                       half
  • Olive oil                      ¼ cup
  • Garlic paste               1 tsp
  • Lemon juice               3 tbsp
  • Mustard paste          1 tbsp
  • Crushed black pepper       1 tsp
  • Salt                               to taste

Recipe Method

  1. Boil 4 eggs, remove skin and cut each into four pieces.
  2. Boil 300 gm fish fillets for 3 – 4 minutes.
  3. Remove from pan and keep aside.
  4. Finely chop 1 bunch of salad leaves, half iceberg, 2 – 3 tomatoes, 3 – 4 radish, 125 gm green beans and 5 – 6 olives.
  5. Mix well.
  6. Coarsely chop boiled fish and add to the vegetables.
  7. In another bowl put together ¼ cup olive oil, 3 tbsp lemon juice, salt to taste, 1 tsp crushed red pepper and 1 tbsp mustard paste. Mix well and make thick dressing.
  8. Spread on top of vegetable mixture.
  9. Garnish with boiled eggs and serve.
