Summer Lentil Salad Recipe

A healthy high fiber salad with lots of crunch.
Summer Lentil Salad
Recipe Ingredients

  • 1 1/2 Cups Dried Lentils
  • 1 Medium Zucchini, Trimmed And Cut Into 1/2 Inch Dice
  • 2 Stalks Celery, Trimmed And Cut Into 1/2 Inch Dice
  • 1 Small Red Onion, Peeled And Cut Into 1/2 Inch Dice
  • 1 Red Pepper, Cored, Seeds Removed And Cut Into 1/2 Inch Dice
  • 1 Small Fennel Bulb, Trimmed And Cut Into 1/2 Inch Dice
  • 1/3 Cup Chopped Fresh Parsley
  • 1/3 Cup Chopped Fresh Basil

Dressing:

  • 3 Tablespoons Balsamic Vinegar
  • 1/3 Cup Extra Virgin Olive Oil
  • Salt & Pepper To Taste
Recipe Method

  1. Sort and rinse the lentils.
  2. Cover with water by 3 inches and bring to a boil, and then turn down to a simmer and cook until tender all the way through (adding more water if necessary), about 20 to 25 minutes, or until the lentils are tender but still hold their shape.
  3. Drain well and cool to room temperature.
  4. Place the lentils in a large bowl with the vegetables and chopped fresh herbs and mix.
  5. In a separate bowl, mix together the dressing ingredients with a whisk until well blended.
  6. Pour half over the lentil mixture, toss and taste.
  7. Add as much additional dressing as needed.
