Tuna Melt

Ingredients:

1 (12 1/4 oz) can of White Tuna (water packed) (drained)
1 Celery Stalk (finely diced)
2 tbsp. of Fresh Parsley (minced)
2 tbsp. of Sweet Green Pickle Relish
1 tsp. of Lemon Juice (fresh)
1/2 cup or 4 oz. of Mayonnaise
4 thick slices of Sourdough Bread
1 cup or 4 oz. of Cheddar Cheese (shredded)
4 Lemon Wedges

4 Parsley Sprigs (fresh)

Method:
1) Place the bread slices on a broiler pan. Divide the tuna mixture evenly among them, mounding it slightly. Sprinkle the cheddar cheese evenly over the tuna mixture.

2) Place under the broiler and broil (grill) until the tops just begin to bubble and are golden, 3 to 4 minutes. Watch

carefully or the cheddar cheese may brown too much.

3) Transfer to individual plates and garnish with a lemon wedge and a parsley sprig.
