Veggie Pizza Night


1 tube of Tomato Paste
1 teaspoon Dried Oregano
1/2 teaspoon Dried Chili
1 Clove of Chopped Garlic

3 Pre-made Pizza Bases (we used Pizza Da Piero brand)

6 Medium Tomotos
1 Small Bunch of Fresh Basil
1/2 Red Onion
1 Large Ball of Buffalo Mozzarella
6 Eggs

Preheat the even to 220 deg C. Take the racks out of the oven and lay the pizza bases directly on each.
Combine tomato paste, oregano, chili and garlic in a small bowl. Distribute the paste between the three bases and spread a thin layer over the 3 bases.
Slice and tomatoes and onions evenly and tear the mozzarella into small chunks. Evenly distribute the topping on the pizzas, first the tomatoes, then the onion and the mozzarella. Place about 6 torn basil leaves evenly on each pizza.
Put the pizzas in the oven for 2 minutes and remove. Crack 2 eggs on top of each pizza and return to the oven for a further 4-5 minutes or until the pizza is crispy and the eggs are cooked.

I like my pizza with salad and this time I enjoyed it with fresh baby spinach leaves and a small drizzle of extra virgin olive oil. It was like we were back in Italy. Yum!
