White Kidney Bean Salad
Recipe Ingredients

  • 3 cups white kidney beans boiled
  • 1 red pepper (diced)
  • 1 green pepper (diced)
  • 1 tsp red pepper flakes
  • to taste Salt
  • 2 garlic clove (minced)
  • 3 Tomatoes (diced)
  • to taste Pepper
  • 1 tbsp lemon Juice
  • 2 tbsps olive oil
  • pinch lemon zest
  • 4 tbsps fresh coriander (roughly chopped)
Recipe Method

  1. In a bowl put all vegetables, cooked beans, salt, pepper, red pepper, garlic, oil and lemon.
  2. Refrigerate about 20mins.
  3. Bring to room temperature before serving
  4. Before serving, add chopped coriander and serve
